Before I tell you what this is, let me preface is it by telling you the end result was absolutely delicious, and so did the other two witnesses. 

This here are chicken skins fried (I usually fry in coco oil - but an impromptu decision we used…not so great oil this time). Now before you gag, free your mind (and the rest will follow). Crispy, delicious goodness. 

Back story: I tried this experiment with my dear fellow meat lover, Chris (The Meat Rack), a while ago and it was expectacular. Since then I have been on the hunt to find a butcher that would sell me just chicken skins. I was judged hardcore 5 different times by grocery store butchers from Ralph’s, Albertsons, Vons, Pavillions, and Super A Foods. Walked away head bowed. Until last night, at the glorious enormous Whole Foods I encountered Marcelle, my now favorite butcher who not only didn’t judge me but granted my request on the spot!

I love it when Whole Foods’ are big. That came out sounding a little pervtastic. There are certain Whole Foods out there that are larger than average. Meaning they have more corners where they make made-to-order foods for you. 

I present to you, the Whole Foods Taqueria’s tostada salad sans tostada with free range chicken, bit of cheese, fresh guacamole, cilantro and onions over bed of greens. And lurking in the background is a watermelon agua fresca (made of only watermelon and agave nectar).

Have I ever mentioned my love for Whole Foods? I LOVE WHOLE FOODS WITH ALL MY HEART AND SOUL. There. I said it.
We’re back in production at work, which means free lunch for all staff and freelancers. Usually lunch is ordered from decent restaurants and I can usually find something primaly. But today they ordered from Bagel Nosh - just like it sounds, mostly bagels and some egg dishes. I know you’re probably saying, but you love eggs. Yes, but I had already had them in the morning.
So I opted to step out for lunch and went to Whole Foods for this concoction of organic greens, chicken tinga, guacamole, pico de gallo with a very refreshing melon agua fresca (made only from melons, ice, and agave nectar).

The Good, the Bad, and the Ugly: The Fat Edition

I am just sharing Heather Eats Almond Butter’s words of wisdom here because I couldn’t agree with her more on this whole fat business/whole foods.

Every time I write a post on fats, people always respond that they love their good or healthy fats, but I think my idea of good fat is probably a bit different from most other food bloggers out there. Trans fats? Very bad, but saturated fats? Nah, I like them. :)

I used to use cooking spray oil, canola oil, Smart Balance, etc., but I haven’t touched any of that stuff in a while. (Does anyone else have a problem with cooking spray oil ruining their pots and pans?). Now I stick to mostly butter, ghee, and coconut oil for all my baking and cooking. I mean if you think about it, all 3 have been around for years, and were used by our ancestors…before the rise of heart disease or the obesity epidemic we have on our hands today. Modern day canola oil, cooking spray oil, Smart Balance, etc…they are all highly processed and have been around just a few years in the relative scheme of things. Wouldn’t you rather stick with the real stuff? I know I’m always HEABifying my meals, desserts, etc., but when it comes to fats, my rule of thumb is to eat them the way nature intended us to…

But just because these are all natural, whole fats, isn’t a green light to go crazy with them and get yourself a food baby. Heather is not a primal eater (she eats grains) but is still a healthy eater nonetheless and I agree with her take on fats.

So I made a discovery, although I’m probably late in the game haha, but I love the Whole Foods iPhone App! It gives you all sorts of different recipes, which you can base on a special diet (low fat, gluten free, wheat free, low sugar, etc), or from ingredients you have on hand. It needs a bit of tweaking and they need to add Low Carb to the special diet portion but otherwise very yummy recipes!
