Almost perfect score for week 1 of LiveFit! Sunday I failed on hydration, didn’t quite make the mark. I’m actually surprised I did as well as I did considering what I had been going through. Let’s see. 

I was sick for half of that week. Extremely stressed out with my living situation for the entire week. Thankfully I’ve never been one to eat my feelings, rather I don’t get hungry instead. But when I am stressed I do like a glass of wine or four, but I managed to stay alcohol free. 

Onto week 2. Things can only look up now, right?

Just what I needed after a very eye-twitching, shitastic, stressful day. A juicy boneless ribeye steak. Many thanks to The Meat Rack for pointers on making a damn good steak. It is actually not too often that I make a steak (they’re usually made for me buahaha), so I’m still learning techniques. I must say this was a damn good one.
I rubbed the steak with TJ’s 21 Salute, ground cumin (I’m telling you, I love the stuff), and creole seasoning. Let it sit for about 15 minutes, then rubbed coconut oil all over it. Heated my pan on high, let pan heat up, then throw steak on there. Cook each side for about 3-4 minutes for a medium to medium-rare finish. MOUTH WATERING.
Those tiny side dishes are a baked plantain and sliced tomatoes.

2012 has to be my year. 2011 was full of ups and downs…lot of downs. Stress and eye twitching and throat lumps. Even this end of year is a bit rocky on my end. Don’t get me wrong, I have loads to be thankful for and many amazing people in my life. But. I can’t wait until things just start going right and on the right path to what I’ve worked towards.

03.31.10 Stress, Frustrations, and Annoyances

WARNING: This will be a long one *sigh*

Breakfast was different, yet oh so yummy. Last night I had baked half a (sweet - they’re sweet when they’re yellow-with brown spots) plantain and then started to make an omelet and put pieces of the plantain in the omelet as it cooked, delicious.

Lunch was at a local little joint called Torrance Bakery…online menu named 3 salads and no descriptions of what is in them except the name of it. Had to order ahead of time because it’s always busy there (and grandma was treating) so i picked the Chef Salad. Second lunch in a row that was just ehhhhh. Had a bunch of roast beef (not a fan), ham (not a fan), roast turkey breast (that was good), olives (not a fan) and some disgusting bell peppers (not a fan whatsoever), and then other just regular salad stuff…but the stuff I named, I picked off (minus the roast turkey breast - that was good).

As you can tell by my earlier post, I was stressed out, frustrated, and annoyed from work (exit strategy in play) and I knew working out would make me feel better. To top it off, I come home, and the house is a mess. Mind you, one roomie is on Spring Break from school and he doesn’t have a job (just is Army reserve so only reports one weekend a month to base), so he was home all day…none of the dishes were put away, there were dirty dishes in the sink, had his vinyl records ALL OVER the living room, and from the looks of it had been playing video games ALL DAY. UGH. I knew I would snap at him if I sat and chatted, so I grabbed my weights and headed straight to my room, changed, and got to work. Funny how much frustration can fuel your workouts. I actually wanted to do more after the push-up challenge but it was starting to get late and I really don’t like eating too late.

Dinner was surprisingly yummy! Few days ago I bought Frozen Wild Caught Salmon Burgers that are ready to cook/bake straight from frozen that I had seen Losing Weight in the City eat. I put it in my little toaster oven for the specified 10-12 minutes and voila it was done. I had seasoned it a bit and I just made it a protein-style salmon burger with romaine leaves and added avocado, tomatoes and onions.

Dessert….my my my….yummy and definitely going to be a repeat. Simply put in your blender 1/3 c coconut milk, 1/2 organic pear and 3/4c organic frozen strawberries and blend! Coconut milk is naturally sweet already and blended with fruit is pretty damn delicious. This serves one. Although, next time I think I can leave out the pear because I really couldn’t taste it in the mix.

Totals, not too shabby at all. Calories were almost on point, fat/chol is fine and under on carbs, Y-E-S! Figured I’d be over on sugars a bit because of fruit…again, I don’t get TOO worried because it’s completely natural sugars. And go protein! Ok tumblrs, till next time!

You know that feeling?

When you want to seem chipper and okay to everyone but there is this pending result that leaves you anxiety-ridden because you just want to know already but have no choice but to wait? To wait for something that can change your life to the worst if it doesn’t turn out well? Some health related issues are completely out of someone’s control (not caused whatsoever by lifestyle choices), and that makes it that much harder.

Odd fact: My eye lid (top or bottom, take your choice) twitches when I am stressed or worried.

02.11.10 Good Girl Food

Much better totals today than yesterday and fitness to boot, yay! Although this also ended up being another very stressful day in the end…potential bad news from the doctor is never good.

EDIT:

Forgot to add in shredded boiled boneless skinless chicken breast, used about 1/2 cup shredded so my Cal total is actually 1003…which I just noticed is way under my recommended totals *sigh* I just can’t win…I just wasn’t that hungry today.

EDIT #2:

Fitness total is actually 651…livestrong accidentally doubled the circuit training…just noticed and deleted one but didn’t feel like doing another screen shot. So in the end, consumed 1003 calories and burned 651, there!
