Dinner Nom
Last night’s dinner. My mom can be so sweet with her little care packages. This is filet mignon she had sliced up and put in a baggie for me to cook when I got home after I was pouting because I hadn’t eaten dinner yet from dealing with all the car stuff. So I seasoned it with cumin, onion powder and red pepper paste (Peruvian Panca Pepper) and pan-grilled it covered in bit of ghee. Threw it over a bed of spinach, avocado, and feta cheese. Yum.

Last night’s dinner. My mom can be so sweet with her little care packages. Simplicity of tuna, spinach, tomato, 100 Calorie Wholly Guacamole Pack, feta cheese crumbles and lime juice. Was feeling way too lazy and tired post WOD to cook, so this definitely hit the spot.

I made last night’s dinner on spur of the moment because I was invited to have sushi, but I kindly declined because I was puffy/bloated from having grains the night before (couple churro dots from Border Grill truck during First Friday Food Truck Fest in Venice, CA). It’s so crazy to me how my body reacts to grains/wheat now.
I sauteed pieces of steak (frozen pre-cooked from my mom) with onions, ground cumin, seasoned salt and Peruvian panca pepper. I also baked a handful of sweet potato fries and a side of sliced tomatoes with feta and balsamic vinegar on drizzled on top.

Dinner Date Courtesy of Moi

Cooked dinner for the first time for the boyfriend and thankfully it was a hit! He loved it! When it was first decided I’d make dinner I couldn’t decide and figured I should go with what I had on hand. So spinach and feta cheese stuffed chicken breast it was! I have made this dish once before and it was a hit back then as well, so I had high hopes. This time I wanted to do a full course meal, so I started with an appetizer. Without further ado, here are the pictures (sorry for the crappy phone quality pictures!):

Here we have an artichoke bruschetta with cucumbers to dip it in! It was sooooo good!

Spinach and feta cheese stuffed baked chicken breast with a tomato & cucumber salad that was drizzled with garlic red wine vinegar, ground pepper and sea salt.

And he was in charge of dessert so he brought over fresh strawberries and dark chocolate (he already knows me so well - knowing I don’t like milk chocolate really). Lucky for him I have made this poor man’s fondue before so I knew what to do (because he sure didn’t lol)! DELICIOUS!

And that folks was my homemade dinner date that he was very impressed with!!! Yay!

Quick & Easy Tuna Salad
Tuna, chopped onions, tomato, cucumber, 1/4 avocado, crumbled feta cheese and fresh lime juice drizzles on top!
Super easy and fast lunch or dinner! I had this tonight for dinner and it hit the spot just fine! To make it even easier on myself, I buy the pre-drained tuna packages by Starkist so I don’t have to deal with the t=stinky juices from the can.

Feta & Spinach Stuffed Chicken Breast
with a mixed herb salad and a side of sweet potato fries.
Main Dish:
4 or 6 oz boneless skinless chicken breast
1/2c raw spinach
about 2 oz crumbled feta cheese
about 1 tsp dried oregano
about 2 lemon wedges
1 toothpick
1 or 2 tsp coconut oil (or your oil of choice)
Tenderize and flatten out chicken breast. Marinade in fresh lemon juice for a few hours (or overnight).
Heat oven to 355 degrees. Slightly grease a baking pan/small casserole dish. Slightly oil outside part of flattened chicken breast. Then put feta cheese and diced spinach in the middle of the flattened chicken breast in a baking pan/small casserole dish. Roll up chicken breast so both ends meet and secure closed with a wet toothpick. Sprinkle oregano on top of roll. Cover with foil and then insert into oven for 30 minutes.
Verdict? DELICIOUS! And I have a witness, I made two of these for my best friend and I and she is in love. Asked me for the recipe and everything so she can make it at home, too. The above recipe is for one person, so for more people just double it, triple it, etc. This was an idea I have had for a while and had been meaning to try and finally did. You really can use any sort of stuffing that bakes well such as ricotta, or mozzarella or mushrooms or onions, etc.
