This is just what I needed after nonstop weekend plans. To wind down with this nomilicious cage-free egg omelet, uncured bacon, and avocado combo.
Breakfast A Go Go
I’m sure you’ve heard me mention often but I like my breakfasts healthy, yummy and fast. I hard boil and peel about 8 eggs every Sunday to have them ready to go for the week. Always have avocado on hand. And this time I also had sweet potato hash leftovers (from Sunday breakfast I made for my Tio and Tia).
All I gotta say is…NOM.
First real breakfast made in my new little home! Coconut flour pancake topped with fresh strawberries and bit of pure agave, fried egg, avocado (of course, and bacon (of course). Great start to a Sunday morning.
I present you with meatza (kind of) topped with two pan fried eggs. De-mf-licious.
Let me ‘splain. So in my apt I still don’t have all my kitchen staples. But I had ground beef, cumin, garlic powder and an oven. Mixed and in it went for 30 minutes at 350*. And decided why not add couple eggs on top. Best part? Half of it left as leftovers. Worst part? Don’t think my vintage oven is going to work out. My smoke alarm kept going off while it was baking. Wah.
Last night i had some Leftover Burger patties i made from scratch. 80/20 ground beef, garlic, worcestershire sauce, a mushroom balsamic vinagraitte dressing, and a splash of FISH SAUCE…yup, the secret to amazing burger patties.
Couldn’t find any decently sized romaine so grilled up some onions, fried an egg, threw in some avocado, and Fork-and-knifed it up.
These kind of concoctions is a big reason why I love my b.f.f. And why you should follow his meaty ways.

Ah, my people’s food is so yummy. This is “Bisteck Montado”, flat skirt steak, topped with a fried egg, plantains, and I replaced the rice with quinoa (which is actually a fruit and not a grain).
Oopsie Roll Egg Spinach & Avocado Sandwich
Ohhhhh man! Experiement of another Oopsie Roll sandwich worked again! Since I had made 6 rolls last night I brought a couple to work with me, along with my usual 2 eggs, some spinach and avocado in a baggie. Made my eggs per usual (aka nuked them), then transferred egg onto one Oopsie Roll, added avocado, then topped it with the other Oopsie Roll. YUM. Held it like a sandwich and everything.

Little late to post this but here it is nonetheless! Better late than never, right? I nuked 3 eggs, bits of salami, spinach and after topped it with avocado slices. It got so fluffy and cute!

So this is not my usual breakfast but it was actually a nice little change. These are leftovers from last night’s romantical sunset date I had with the friendboy on the beach (except the avocado & eggs). Here we have a few peppered salami slices, a couple Trader Joe’s Hard-Cooked Eggs, Trader Joe’s Goat’s Milk Creamy Cheese and half a small avocado.

Don’t mind me while I gently wipe the drool. That is a Trader Joe’s Garlic & Herb Chicken Sausage cut into pieces (that I pan-grilled last night), a Trader Joe’s Hard-Cooked Egg, and one 100 Calorie Wholly Guacamole packet!

I guess a mini-frittata is my Sunday tradition because I made one last week as well! This is my 3 egg spinach mini-frittata topped with avocado slices and coffee mixed with almond milk (note to self: buy a coffee maker).

Confession: Roommate made a huge batch of pasta with chicken and broccoli…and I picked out some chicken and broccoli to use in my omelet.
Lunch Nom at Mom’s
Today’s lunch nom consisted of couple fried eggs (no worries, she fries in EVOO - not vegetable or corn oil), 1/3 boiled plantain, spinach/tomato/onion/red vinegar salad and steamed zucchini! (Not pictured: 1/2 a naval orange).
Geezus, I love my mom!
