Ok, not to toot my own paleo horn, but this ground beef for some reason came out freakin’ mouth watering amazing.
I totally winged the seasonings. At this point in my culinary life, I know very well what seasonings I like and which ones go together well. To sum up the seasonings I used (amounts are undisclosed because I didn’t measure at all): ground cumin (of course), paprika, cayenne pepper, pepper, ground red chili pepper. And of course I made it all in coco oil.
After the ground beef, I made the spinach (with minced garlic) in the leftover oil and seasonings and baked the plantain.

I used 80/20 grassfed ground beef. Brown your ground beef in coconut oil, diced onions and minced garlic. Drain part of the liquids out (will make it too watery if you leave it in). Turn off heat. Put in 5 diced small tomatoes (or 1 can of diced tomatoes - no sugar), and 1 6oz can of tomato paste. Add ALL THE SEASONINGS (if you don’t get the reference then see yourself out), ground cumin, paprika, chili powder, cayenne pepper, TJ 21 Salute. Amounts vary on how spicy you want it. Bring to a boil and as you mix everything together. Leave on a low simmer for about an hour if you can (tastes best when you can do this to really soak in the flavors). NOM.
Stacked: Food Well Built
The new chain Stacked: Food Well Built has opened its first of three locations in Del Amo Mall in Torrance, CA (my hometown and only about 10 minutes from where I live now). This place aims to change the way we all order food by having an iPad at every single table and at the beer and wine bar tops.
I’d walk by this location many times as I perused the mall and always wondered “what the heck is Stacked?” Even Googling wasn’t much help, because for a long time their website was not very informative. I assumed it would be another Counter just by the sounds of it (“food well built”).
This place offers customized burgers, pizzas, salads, sausages, ice cream cookie sandwiches, and shakes. Talk about overwhelming! A couple friends and I decided to share sweet potato fries, Chris got the Bleu Cheese Burger, and Shan and I shared the BBQ Carnitas Pizza (with a gluten-free crust) - yes, I went non-paleo! Then I got a little ice cream sandwich where I picked a snickerdoodle cookie, vanilla ice cream, and an oatmeal cookie (think Diddy Reese style). Needless to say, I went in light on my feet and I left with a food baby.
I don’t even feel guilty for my food choices because these are a rarity for me. For my first visit to Stacked I wanted to indulge, while my future visits (because there are so many choices and customizations) will be healthier and primal.
So THAT just happened. That my friends is called an alfajor. A Peruvian dessert also known as a piece of heaven to me.
Coworker made some and brought them to work…I have been avoiding them all day successfully because I told him I’ll have just half of one later on. A full one is about 2.5 inches diameter. Kept thinking, will I really be able to have JUST half of one? I mean, these are treats of paradise. And I haven’t had any flour/starches/artificial sugars in a LONG time, no dessert treats whatsoever…I felt I deserved at least a little something.
Successfully only had HALF of one alfajor (about 2.5 inches diameter), will have to figure out totals for that later. Those 3 bites were worth it, and I have gym later too. All is well in my quirky life.

I have an internal battle with OMGSEXYFOOD because their posts make me salivate for all that deliciousness….do I “unfollow”? No. Do I quickly scroll past it on my dashboard? No. Why? Because the food posted is sexy in its art and creativity, and I don’t scroll passed it because I have to quickly pause to take in its deliciousness in all its glory, even if just visually.
Lomo Saltado was a success! My mum would be so proud!
