Delicious homemade paleo chili with plenty leftovers.
I used 80/20 grassfed ground beef. Brown your ground beef in coconut oil, diced onions and minced garlic. Drain part of the liquids out (will make it too watery if you leave it in). Turn off heat. Put in 5 diced small tomatoes (or 1 can of diced tomatoes - no sugar), and 1 6oz can of tomato paste. Add ALL THE SEASONINGS (if you don’t get the reference then see yourself out), ground cumin, paprika, chili powder, cayenne pepper, TJ 21 Salute. Amounts vary on how spicy you want it. Bring to a boil and as you mix everything together. Leave on a low simmer for about an hour if you can (tastes best when you can do this to really soak in the flavors). NOM.

Last nights dinner! I made some of my Primal Bison Chili with a side of pan-fried plantains (in coconut oil). Delicioso and I have left overs, yay!

Ground Turkey Chili
Tonight’s dinner was this primal ground turkey chili! Basically I combined:
Ground turkey, tomato paste, bit of water, bit of raw coconut aminos (soy sauce substitute that’s yum), tomato chunks, diced onions, ground cumin, ground ginger, Mrs. Dash garlic & herb seasoning, organic paprika, ground red chili pepper, and organic cayenne pepper.
If you know me, then you know I can’t handle spicy, but I am working on building my tolerance. So add the spices as you see fit. Also, cook onions first for a bit since they take longest to cook! Then I sprinkled very little shaved Parmesan cheese on top!

05.31.10 Happy Memorial Day Folks

Not a good day in my primal life! But life happens, right? So, I woke up, did a few push-ups to “grease the groove” and then had some coffee at home.

Following that was time for brunch at my friends house with the ladies. I kept it primal except for the “French Toast Souffle” (from Cooking Light recipes) and mimosas she made! The souffle alone held half of my daily intended carb intake, but it really was very very tasty, worth it, and I also didn’t want to be rude and decline the main dish. In the end it was a good time with the ladies.

Brunch is always at an odd time, because I wasn’t hungry for lunch time. When I got home I noticed that my roommate (the one who rarely ever cooks) left me a Colombian Arepa - these suckers and yummy and are made of flour - that he made. At least it was small. So that added to the carbage.

And dinner, the Primal Bison Chili, I posted about earlier, and it was just what I needed: good old delicious protein.

Totals…I am disappointed in the consumed carbs and sugars. Not pretty, but tomorrow is another day and I at least was able to sneak in a workout to help compensate!

Primal Bison Chili

I had been casually looking up primal chili recipes for a few weeks now and have had ground bison in my freezer for a couple months now and somehow always forget about it when deciding on a dinner choice! After lounging around on a lazy Sunday, I decided I was going to try it finally! Now please don’t fear the ingredient list length, it is 90% seasonings (mostly essential seasonings that people have in their cabinet anyway!).

What you need:


  • All Natural Grass Fed Ground Bison (I used 4oz)
  • Unrefined Virgin Coconut Oil (I used 1/2 tsp)
  • Yellow Onion (I used 1/4 of it)
  • Organic Tomato Paste (I used 2 tbsp)
  • Water (I used 1/3c)
  • Ground Cumin
  • Ground Paprika
  • Ground Cayenne Pepper
  • Onion Powder
  • Ground California Chili Powder

What you do:

Start by heating the coconut oil in a pan and then first add the onions to cook. Once the onions are almost clear add the ground bison and brown the meat slightly.

Then add the tomato paste, water, and all the seasonings and stir until everything is mixed in and cooked. And that’s it! Simple enough, huh? Keep in mind all the seasonings are to taste! For example, the spicier you want it, the more chili pepper you add, etc.

Okay, I have a confession. I was feeling a bit lazy and was going to use the tomato paste and a pre-made Trader Joe’s Taco Mix I have and be done with it. But, as I usually do, I looked over the ingredient list on the little package while the meat was cooking. There was cane sugar and sea salt (I try not to use much salt anymore). But what I did notice is that every other seasoning in the ingredient list, I already had! So I broke that lazy bone and quickly gathered my seasonings.

Verdict?

I will definitely be making this again! I had way too much carbage at a friend’s brunch so I wanted to keep it meaty and protein for dinner and this fit the ticket perfectly! Do you know how much protein 4oz of bison has? 24g! Wowza! I definitely recommend this simple chili!
