Bistec Encebollado
I’m just going to get right into this meaty goodness.
Beef stew strips marinaded in red wine vinegar, cumin and Thai seasoning blend (salt-free), green heirloom tomato, white onion, then all made in a small dollop of coco oil. A side of asparagus made in my own lemon (pastured) butter sauce. Side of the Primal Biscuit leftovers I had.
Delicious homemade paleo chili with plenty leftovers.
I used 80/20 grassfed ground beef. Brown your ground beef in coconut oil, diced onions and minced garlic. Drain part of the liquids out (will make it too watery if you leave it in). Turn off heat. Put in 5 diced small tomatoes (or 1 can of diced tomatoes - no sugar), and 1 6oz can of tomato paste. Add ALL THE SEASONINGS (if you don’t get the reference then see yourself out), ground cumin, paprika, chili powder, cayenne pepper, TJ 21 Salute. Amounts vary on how spicy you want it. Bring to a boil and as you mix everything together. Leave on a low simmer for about an hour if you can (tastes best when you can do this to really soak in the flavors). NOM.
My contribution to the family gathering: Beef and Chicken meatballs mixed with mozzarella, Parmesan and secret seasonings. Slightly coated with coconut flour.

This year I decided to be a good girl and just head home straight after work. Allergies have been acting a fool also.
Went straight home to make this delicious taco salad of grassfed ground beef, spinach, tomatoes, bit of cheese, a dollop of plain fage, and of course avocado. Lovely mountain of nom.
05.18.10 Feels Good to Cook


I kind of miscalculated the amount of Greek yogurt I made. I should have put more Greek yogurt and less almonds perhaps or more of both because I found myself a bit hungry before lunch, which never happens anymore.
Lunch was super primal haha. Beef smoked sausages and eggs provided by my dear mother with a side salad. And for a little dessert she gave me a little bit of strawberries and blackberries. I probably should have just had two eggs pan-fried as opposed to three, I was just thrown for a loop since the yogurt didn’t fill me much this time around, which I found odd.
Dinner I posted here and highly enjoyed. I really had missed being in the kitchen and making something new! I’ve been so busy with birthday season, some dates, working out, and just life! But glad I was able to make that dish, and surprisingly it was spur of the moment.
Went over on cals but not by too much so it’s fine. I notice Livestrong brought back the “red” danger highlights if you go over. In case you don’t know, just a reminder that i don’t follow Livestrong’s guidelines for fat or cholesterol, so you will most likely usually see red for those. I am very glad that I stayed under on sodium, carbs (under 100g is where I’m supposed to be), and sugar!
Beef Fajita Style Yellow Pepper & Onions
with an avocado, tomato, spinach, and cilantro salad
This was a quick impromptu dinner since I got home later than I usually do. And come now, we all have those nights where we get home later, and want a quick fast, yet still yummy and filling dinner, and not just leftovers? This was one of those nights for me.
What you need:
- Grass-fed Beef Strips (cut fairly small)
- Yellow Pepper Paste (I used Mirasol Hot Pepper - Peruvian)
- Ground Cumin
- Ground Ginger
- Mrs. Dash Garlic & Lemon
- Unrefined Virgin Coconut Oil
What you do:
It’s quite simple, really. First grease your pan with coconut oil (what I used - or you can use ghee). Beef and onions take about the same amount of time to cook (and for onions to caramelize) so throw them in at the same time. Then add all other ingredients and cook uncovered while stirring and mixing as you go! And voila, that’s it!
Verdict? Very delicious. Very filling. It was beef and avocado heaven. Not pictured was a dessert of strawberries with hot coconut milk & ground cinnamon drizzled on top. I’m a satisfied gal.
Spicy Carne Asada Beef Strip Stir Fry
with a Leinenkugel Sunset Wheat Beer and a dessert of Belgian Whole Yogurt and Blackberries
Confused yet? LOL. Okay, this dish has a tinge of spice to it. I would compare it to a spicier version of a Peruvian Lomo Saltado without french fries. Well here is how to make it if you’re interested!
What you need:
- Grass-fed beef sirloin strips
- Red onion slices
- Tomato slices (I used on the vine tomatoes)
- Carne Asada Seasoning (I used Mamacita that I bought at Sprouts Farmers Market)
- Cayenne Pepper (I used Sprouts organic)
- Red Pepper Paste (I use a Peruvian one that is Panka Pepper)
- Ground Cumin (of course haha)
- Coconut Aminos (you can use a little bit of soy sauce if needed instead)
- Coconut Oil
What you do:
Season the meat in all of the above except coconut oil. Heat coconut oil in pan and place the meat and onions at the same time (NOT tomatoes yet), and cover. Check for a few minutes and mix. When onions start to get clear, add the tomato slices and let cook covered for a few more minutes.
Verdict? If I can handle the spice, you can! I’m a wimp when it comes to spicy so you can gauge how much cayenne pepper and red pepper paste to use. Nonetheless it was very yummy!
And the beer, reason I had this one was because it was recommended by my friend, she advertised it as tasting like “fruity pebbles” so I was intrigued haha! She did say that draft is better than the bottle but I thought it was pretty tasty either way! Figure after the crossfit workout I had I deserved a bit of a treat. And no wheat beer is not primal so it was a slight allowance.
Who says breakfast has to be “breakfast” foods?
TGIF Breakfast of [leftover] Grass-Fed Top Sirloin Filet and a little salad of baby greens, tomato and avocado drizzled with tiny bit of red wine vinegar and olive oil.

Beef Stir Fry
Dinner tonight was oh so yummy! My stir fry included:
- Top sirloin beef strips
- kale
- carrots
- asparagus
- onions
- cumin powder
- onion powder
- garlic salt
- coconut oil
- ground black pepper
- low sodium soy sauce
Mmmm….mmm…mmm!
Early dinner! It’s like lomo saltado but without the French fries…and tomatoes (because I’m out booo).
Beef strips that were marinaded in low sodium soy sauce, minced garlic, seasoned salt and cumin and then sauteed with cilantro and onions over coconut oil. Had no time for a side so little snack will await me later.
Reason for early dinner is that I have an appoinment for an introductory session with a crossfit trainer at 7pm and I don’t like eating a meal too late!
02.23.10 Just Keep On Truckin’




Well look at that, *pat on my back* I followed instructions. Stayed under 100g (barely!) of carbs, raised my fat totals, stayed within range of calorie totals, went over in sugars but it was all natural sugars. Eating lots of veggies also contains some sodium apparently because if you look at those numbers, they mainly come from veggies I had. She warned me that I will have “reds” in my totals but to ignore it for now. Coffee with heavy whipping cream was interesting…a bit too milky tasting for my taste but it wasn’t gross either. And I’ll admit, the bacon I cooked up the night before (in butter!) and had for breakfast with a hard boiled egg was delicious and filled me up pretty good.
Lunch was some yummy (protein packed) chicken with avocado (a personal fave) and lot of other veggies! Even snuck in some broccoli (which if you know me, is one of my mortal enemies). Side of one clementine for dessert.
Followed instructions on my fitness regimen that was given to me too which was running intervals….basically power-walking/jogging with 4-5 bursts of sprints of ALL OUT EFFORT (for 1 minute) for a total of 30-40 minutes. Then did ab work, always start with one minute plank and end with one minute plank.
*fist pump*
Now onto dinner, not to toot my own horn but *toot toot* because it came out delicious! Made premium beef strips from TJ’s in butter, some garlic, cumin, and seasoned salt. Cooked it covered for about 10-15 minutes on medium and cooked it the rest of the time uncovered, flipping pieces intermittently. Had a friend over so gave her some too and she confirmed the deliciousness. Also in the meantime I caramelized onions with bit of garlic in some butter. Had that with big side salad of above ingredients. I was very satisfied after that I didn’t feel a need for a dessert (which is usually fruit and/or greek yogurt)!

Those links explain it all very well! I wouldn’t consider myself an advocate just yet because I am only finishing Day 2 and waiting to see the end result after a week or two and also go by how I feel and I realize everyone is different in how their bodies react. But what Mark explains really makes sense for the most part. But I’ll also be honest, I don’t think I so much CRAVE carbs, but I just like it with certain things…like sandwiches, or my grandmas pasta recipe….but I am willing to try this out in the meantime and see if I end up adjusting and liking it. Wow I blab so much! Good night!
P.S. It makes me sad that most of my “health & fitness” followers are on central/eastern time so they don’t get to see this right away and maybe even miss my posts on their dashboards at night when I ramble on about my day and food and fitness *sad face*
