Easter Primal Breakfast Muffins
This is the appetizer I took to the parentals home! These little cups of joy were made of egg, bacon, cheese, spinach and onions and were a big hit and I apparently didn’t make enough!
EDIT: The recipe to these little guys has been requested by a few people so here it is!
Ingredients (Makes 12):
8 eggs
3 uncured and nitrate-free bacon slices
1/3 onion
1 c fresh spinach
1 tsp unsalted butter
Bits of any kind of cheese you want - I used about 1/3c of colby jack cheese bits
Directions:
Preheat oven to 350 degrees. Begin by pan-grilling your bacon slices to your liking, and while those are cooking, chop and dice your vegetables. When your bacon is done, remove from pan, pour out most of the fat, and then grill your onions first, and then add the spinach until both are done. Cut your bacon into bits.
Then combine eggs, cheese bits, bacon bits, butter, and vegetables and whisk together. Then grease your muffin pan (I just used cooking spray) and pour 1/4c portions of mix into each cup.
Place into oven and cook for 20 minutes, do the “muffin test” (toothpick) to make sure it’s cooked all the way through, and voila! Let cool a bit, then remove and serve!
These were a hit with the family, definitely plan to make them again!
