Feta & Spinach Stuffed Chicken Breast
with a mixed herb salad and a side of sweet potato fries.
Main Dish:
4 or 6 oz boneless skinless chicken breast
1/2c raw spinach
about 2 oz crumbled feta cheese
about 1 tsp dried oregano
about 2 lemon wedges
1 toothpick
1 or 2 tsp coconut oil (or your oil of choice)
Tenderize and flatten out chicken breast. Marinade in fresh lemon juice for a few hours (or overnight).
Heat oven to 355 degrees. Slightly grease a baking pan/small casserole dish. Slightly oil outside part of flattened chicken breast. Then put feta cheese and diced spinach in the middle of the flattened chicken breast in a baking pan/small casserole dish. Roll up chicken breast so both ends meet and secure closed with a wet toothpick. Sprinkle oregano on top of roll. Cover with foil and then insert into oven for 30 minutes.
Verdict? DELICIOUS! And I have a witness, I made two of these for my best friend and I and she is in love. Asked me for the recipe and everything so she can make it at home, too. The above recipe is for one person, so for more people just double it, triple it, etc. This was an idea I have had for a while and had been meaning to try and finally did. You really can use any sort of stuffing that bakes well such as ricotta, or mozzarella or mushrooms or onions, etc.
